02 / FROM CHERRY TO ARRIVAL
“New crop” identifies a harvest, not a roast date. Being picked, being ready to ship and being available in an Australian warehouse are different milestones.
Read the country window, then narrow it to a farm, elevation, species and picking period. A country can be harvesting while your chosen lot is still on the tree.
Drying, resting, milling and export preparation come before departure. Cafe Imports describes a typical 30–60 day rest after harvest and processing. Source ↗
Sea freight adds weeks; routes and consolidation vary. Cafe Imports uses roughly six weeks as a broad shipping guide, not an Australian route promise. Source ↗
A port arrival is not warehouse release. Confirm clearance and availability, then cup an arrival sample before setting the roast plan. A calendar cannot assess a lot’s condition.
Harvest bars are sourced seasonal ranges, not a forecast for every farm. Project Origin’s 2024–25 calendar provides the marked earliest-arrival benchmarks; we have not relabelled them as verified 2026 Australian ETAs. Where sources differ, country notes explain the scope instead of averaging the dates.
For origins without a benchmark, our provisional 3–6 month allowance after picking is an editorial planning assumption informed by processing, resting and freight stages. It is not a supplier quote. Air freight, delayed exports, later pickings and storage can move availability outside that range.
This is a manually researched reference, not a live inventory feed. The review date only changes when sources are checked. The month selector follows the recurring calendar; it does not verify that a harvest or shipment is happening now.
